两个差别很微妙
像你说的evidence在指任何一样可证明某一件事的真实性的东西或事情，他是个本身存在，可以不为任何目的性，但也有证明之用。
proof侧重prove，他就是为了证明某件事，有些人找出他来为了证明某件事之意。
还有一个就是汉语中证据和证明的区别，前者偏中性，证实证伪皆可，后者强调证明一个结论，多为证实。
还可以引申到evident和prove来理解。
